Viva Mercados is a huge hit in Las Vegas among healthy lovers of Mexican food. The entrees are among the best in town, but what separates Viva Mercados from other restaurants is their health conscious attitude. No animal fats of any kind are used in preparing the dishes, thereby saving your arteries without sacrificing taste - healthier canola oil is used instead.  This is good news for vegans and vegetarians who will be pleased with the selection of meatless entrees. If you like seafood, try the Maresco Vallarta, it's orange roughy, shrimp and scallops cooked in a coconut tomato sauce with capers and olives. The portions are rather large, so bring your appetite. If you're going out for Mexican, Viva Mercados is worth the ten minute drive from the Strip. You can have a fantastic Mexican feast and not feel too guilty about it.
